All I know is, I eat tons of fish. Lots of raw tuna (sashmi), which is said to be full of mercury. In fact, I eat fish 3-4 times a week. With my history of cancer, I get blood test for heavy metals. When I fish, I keep the smaller fish to eat and let go the big ones.
Never had a problem or a positive test for any heavy metals.

I know Mercury evaporates when heated, so when you cook the fish dose it leave?

I don't think it goes away unless you burn it to a crisp. As an adult I would not worry about it too much because I broke a lot of thermometers and played with the mercury making my coins real shinny and it has not affected me.
but I think BobG injested some of it when he was younger.

that's why I bought a new E-Tech, I did not want to contribute to the problem...them damn Mercurys!
