caught a few nice crappie 1.75 to 2.25 lb range.

How big do they need to be so you can actually get fillets worth eating? I went fishing for them as a child and remember them being real boney.

I fillet them as small as your hand with a electric fish fillet knife then cut off the rib area , then there is no bones at all if done right.

Wow, that's some big crappie. I have a neighbor that'll have 1000 boneless crappie filets in his freezer by April 30th. They're really biting right now.

My 7 year old grandson caught a 35 lb. flathead catfish in a 2 acre campground pond earlier this week. He'll never forget that fish--which is likely to get larger in his memory as the years go on. Unfortunately big cats don't filet out well as the incredibly tasty crappie.

PS: We use a GE 110 volt electric knife to clean fish.

They have to be 10 inches to keep in Texas. But let me tell you something, I would eat them smaller. Crappie may be the best eating fish there is in MHO. As stated earlier filet and bone out the ribs and no bones. Now all that being said my personal, favorite size is about 2 pounds and up, only because there is more to enjoy!

They have to be 10 inches to keep in Florida, too. In Lake Okeechobee 11-13+ inches are quite common. 12-13 inch crappie make some nice-sized filets. We use a batter called Everglades that is absolutely delicious. It is by far the best fish I've ever had.

Never heard of Everglade batter. Maybe we need a cooking section too. What are the ingredients? Can I use it for all types of fish?

My 2 favorite tasting freshwater fish are crappie and walleye.
