Motor Height / Trim Question

Hello,
When I'm driving I find I need to keep the trim 90% of the way down in order for the boat to ride flat/level. If I were to trim it up to mid-height, the front of the boat rides way up in the air and I can't see properly over the front of the boat without standing.
What does this mean for my motor height?
At rest, the boat sits quite a bit lower in the water at the rear. I assume this is due to the weight of the upper deck/slide.
