Gorgeous rig! As far as speed---definitely sounds like a prop problem. The cavitation shouldn't happen-but you have a lot of weight up front. You can overtrim and blow out trying to get the nose up.

My cavitation plate is even with the bottom of the splash well(I call it) Yours looks a bit lower--may be causing an interruption of the water flow around the prop. Too much lower unit in water.

May need to reduce pitch 2". Ask a prop guy about adding a little cup to the edges---may help also.

Good luck...

So the manual said I could go full throttle just not for longer than 5 minuets I tried I could only top out at 5000 rpms 5he manual says it should hit 6300. No where close 3 adults 2 kids a cooler gonna stop at the dealer on Monday and ask what's up it also cavitates anything more than 1/2 tilt the motor is on the last hole. Any suggestions that I can tell the dealer.
Assume you mean 1/2 tilt on the gauge? If so that's likely a lot of trim for any boat and many boats can only be trimmed a small amount before cavitation and/or a loss in speed sets in. On my boat I can only trim while at speed no more than the 1/4 mark and usually less. Keep in mind that you should always start off with your motor trimmed DOWN fully and once up to cruising speed start trimming up in small increments till you find that sweet spot for not only improved speed but for that neutral steering where the torque turn eases up.

thanks for the info, I still couldn't hit wide open as far as trim I am used to my old benny the higher the trim the faster I went. gps only showed 26 going up river 5 mile current. It did get on top of the water you could feel it, it was like my old speed boat and as soon as I got on top its like it was a different motor ad boat. Once we were on top we started to sail, but I backed off as I don't want to go over the 5 min mark for full throttle. O I need ten hours on the motor so I can really see if I can get 6300 Rpm.

Very nice rig!
Looking for something similar with a live well. Yours may have one, I did not spot it. And it wouldnt get much use on mine... but it would be handy to have.
I really do love the layout, for our kids and grandkids that would work great.
For granny and me, astro turf and lawn chairs would do, but I raised daughters and they want it all lookin nice!
