Ever filet a HUGE catfish? Their rib bones are pretty tough. Stingrays we catch here have a triangle shaped cartilage in each wing, easy with an electric. I used both. For fish under 10 lbs, definitely non electric.

I bitched and moaned about electric knives, until I really learned how to use one. Now, its the only way to go, from 1lb bass, to 50lb cats, just gotta learn where to cut. All thats left is skin and bones.

Great looking table, it seems tilted back which is a great idea. I am not sure about the material on top though, the grooves will hold water/guts, etc. I wonder if there is a sprayer also?

We have a 6' piece of stainless counter from an old restaurant that we currently use. It's attached to a home made
wooden stand, but we'll be replacing it with one of the above in the near future....after cleaning 9 catfish the other day,
any of the above would be better than that slick stainless.... :|

To be honest, I've never whacked anything more than the local Walleye, Nothern Pike, and Bass. ALL under ten lbs (except for a few monster Northerns). In my younger days working on the resorts, we would do 'em by the hundreds day after day. I can still do them in my sleep...fast. The Northerns take a special touch to get the y bones and I couldn't see doing them without a pretty soft flex.

From others' replies here as well, I can see that my horizons need expanding :donno

I'm leaning towards a table that has sides on it (since I lost a 10lb channel that slid off a board) with the lower part of the back open to aid in rinsing the table and pushing the gunk through. I don't know yet if I'm going to build one or buy one. Another thing I'd like is the back part of the table hanging out from the dock so all the gunk just falls into the water. If I build one..........I have to figure out what kind of top. Wood won't last and stainless would probably get a piece of wood placed on top every time it's used. I'm going down to the lake this weekend and hunt around.

this is on my trucks tailgate right at the lake I use a chunk of hardwood, an the elect fillet knife take them right in the camper to the frezzer.
